How is fleur de sel harvested?

The salt producers of Cuyutlan take care to use the knowledge they have inherited for over 500 years to harvest this gift of kings.

They create small ponds with the salt water from the lagoon to form salt crystals using the natural power of the wind and the sun.

These crystals float to the surface and are collected by hand with a special sieve. It is left to dry under the sun and then packaged with the utmost care.
